The
two
co-owners
of
Centrale
Végétale,
Boaz
and
Raphael,
are
both
dedicated
vegans
and
kindly
explained
the
sustainable
concept
of
the
cafe
to
me
on
my
first
visit:
Their
homemade
empanadas
are
filled
with
organic
food-waste
vegetables
and
and
coated
with
a
whole
wheat
dough.
The
sauces
that
come
along
with
them
are
prepared
with
local
and
seasonal
ingredients.
And
the
best
part
is,
all
of
it
tastes
absolutely
delicious!
One
meal
includes
four
NADAS
(empanadas),
three
of
them
with
a
different
savoury
stuffing
such
as
lentils,
pumpkin
&
beetroot,
plus
a
sweet
one
filled
with
blackberries
(all
the
fillings
vary
by
season).
The
two
sauces
are
a
vegan
ricotta
made
with
hazelnuts
and
a
traditional
yemeni
sauce
(s-chug)
consisting
of
chili
peppers,
garlic
and
parsley
or
coriander.
The
price
for
one
menu
is
25
CHF,
for
students
20
CHF
and
the
payment
is
made
by
TWINT.
As
it
takes
about
20
minutes
to
warm
the
frozen
NADAS
up,
I
recommend
sending
the
guys
a
DM
on
instagram
(@centralevegetale),
saying
how
many
menues
you
want
and
when
you'll
be
there
to
pick
them
up,
if
you
don't
have
the
time
to
wait
that
long.
Also,
bring
along
your
own
food
container
to
make
your
meal
even
more
sustainable!
