    Wow, what a find!!. The staff was so nice and freindly. They explained every pizza they had and came to see us numerous times to ask if the food was to our liking. The food was simply amazing. Top notch!! You could see that the staff was really happy and that just made the experience that much more enjoyable There are a couple of things to know: 1: The restaurant is open from 1pm to 3pm and only serve the displayed pizzas, so come early 2: there aren't many places to sit so be ready to take it to go 3: the pizzas slices are priced per weight, and there were 8 different types of pizzas Enjoy 😋

    Great place to try a lot of different pizza flavours without breaking the bank. Ordered 4 different flavours for 7 euro. The cheese and crust are just excellent. Each pizza has simple toppings that complement each other perfectly. The service and quality is top-notch.

    At first I thought I was overcharged for the pizza since they charge by weight but then I realized they use a whole wheat crust which is a lot heavier the normal flour. Pizza was decent, not necessarily my type of pizza but they clearly use high quality ingredients and I like that it is a whole wheat crust. Order about 1/3 the size of pizza you normally do and it will be plenty since this pizza is very dense.

    Pizza charged by weight - loads to choose from Great place, great atmosphere, great people! Stopped by after a day at the gardens, on the walk home wanted to try this place out! Fresh, thick, pizza - more like a bread with toppings! The fresh combinations on top were incredible and the vibe in here was amazing! Two guys in here put their soul into their job and we waited for their recommendations

    We ate pizza everyday for 2 weeks all over Italy and this place was the Best hands down! The toppings were delicious and the whole wheat dough made it stand out from the other places. Owner was very friendly and gave us wine as well. Would definitely recommend! Only tip is to get there close to open because it sells out fast.

    Must try when in Florence - fantastic pizzas with incredibly crunchy crusts and unique toppings even with fruits. Got a sampler platter for 1 and a glass of Prosecco for €10. Kudos to the Super friendly staff too!

    Great little pizza shop serving non-traditional, but delicious, pie! Thicker crust, but still light & crispy with many out of the ordinary toppings AND whole wheat! Pick 2, 3 or 5 to try - love everything about this place! Talked to the owner - super friendly with brilliant idea!

    Delicious variety of both meat and vegetarian pizzas by weight, so get a variety. They are then finished in an oven and sliced. Be prepared to eat with your hands. The pizzaiolo is an artist, delicious fermented dough and creative mix of ingredients.

    We were looking for a quick place to have lunch and were craving pizza. My husband was ify about this place when we walked in. As we were discussing whether to eat here or not, a customer convinced him that it'll be the best pizza he's ever had. And I must say it was an exceptional experience. Their pizza is hands down the best I've ever had. The flavors were perfectly balanced, and the crust was cooked to perfection - crispy on the outside, yet delightfully chewy inside. The owner was attentive, friendly, and made us feel right at home. The ingredients were fresh. It was evident that they use high-quality, locally sourced ingredients in every dish. The toppings on the pizza were vibrant and bursting with flavour. If you're a pizza lover, this place is a must-visit.

    We came across this restaurant pretty late at around 3pm and there was only one piece of pizza left available to order. We are so glad we did - it was so light and fluffy, and bursting with incredible flavour. The owner was so kind and generous, he even gave us more pizza than we had asked for without charging extra since he was closing up. My only regret is not coming earlier in the day since it's clear that the pizza sells out fast. I'll be dreaming about this pizza for a long time!!

    Unique and excellent pizza experience. A must try if you are in Florence, but get here a little before it opens as it can sell out quickly. The airy whole wheat focaccia style dough and fresh, interesting toppings such as guanciale made the pizza unusual and delicious. The owner is a true gentleman and kind human. He made us feel like he was hosting in his home and that it was a pleasure to serve us. This was a truly special meal.

    This pizza restaurant redefined my pizza experience. Served by the slice, each piece was a unique masterpiece. The fresh ingredients and perfectly balanced crust created a flavour explosion. The cozy ambience and very friendly staff/chef made it even better. If you’re in Florence, don’t miss this pizza paradise. It’s the best I’ve ever had!!

    We arrived 15 minutes before opening and the owner kindly seated us and served us 2 glasses of complimentary wine. He explained he’s not always ready before 12 but we got lucky. The pizza we tried were all amazing and bread is so fresh and chewy. My husband kept saying it was the best pizza he’s ever had. Really good price too! 18 euro worth of pizza filled both of us up!

    Exclusive pizza with the min 48h fermented dough which is light as feather. Gourmet toppings you wont find anywhere else. You have never tried this kind of pizza before i am sure. Dont miss the opportunity to get in and share the plate with your friends.

    Excellent quality pizzas. It is actually a focaccia bread with high quality ingredients on top. You can try different flavours and you pay by weight. They were all delicious, it was obvious the ingredients were great. Excellent value for money. And the staff was really nice too. Will come back!

    Came alone due to the good reviews and they were right, very tasty pizza measured by 100g which the owner/chef will cut out a rough shape for the number of people you are with. Expect slight waiting time because the pizzas will be baked in the oven to give you this cheese melting and crunchy crusted piece of goodness. Owner/chef was very nice to give me a free cup of prosecco too! Will visit again if I come to Florence.

    I had to write something about this place because it's a unique experience. On top of EXCELLENT PIZZA, that is not your ordinary Pizza, and a good pairing of whatever wine they have on hand, the owners and cook are mindfully fun. They make the dining experience celebratory. I'm sure they see a lot of tourists as it is but if you wanted something different than the cookie cutter pizza joints designed for tourists this is an excellent unique option. There are tables a few to sit at and counter service. Very tasty thick regional daily specials. You might have to look a little bit for it but it's worth the find. 100% I'm going to visit every time I'm back in the area.

    We stopped here for lunch during our trip to Florence. We had to wait for a table, but it was totally worth the wait! My husband and I each ordered a glass of prosecco, & the owner filled our glasses while we waited for a table & refilled them after we were seated. We ordered 4 different types of pizza to try, which are purchased by weight, and all of the pizzas were delicious! It's not your typical pizza, but it was the best pizza we had on our trip to Italy.

    Definitely the best pizza you will get in Firenze. The very fresh ingredients plus the perfect dough makes for an incredible pizza with a fair price! The place is also lovely and Puian and Filipo are amazing people. The craftsmanship around every step of the process is really something. Be sure to arrive as soon as it opens so you won't miss it.

    I don't like pizza, it makes me sick very quickly. I gave a chance to gustarium and got a slap in the face on how good it tasted, it's mind blowing. Now I can only eat pizza in Firenze... The staff is extremely friendly and playful. Would 100% come back. Must go

    The best pizza I have ever eaten! It was like pizza toppings on the best focaccia 👌🏼👌🏼 10/10! Would highly recommend if you are in Florence we have 4 slices of pizza each and a glass of wine each and it came to €25 which is really reasonable!!

    Pro level yum! It says something that a town that’s known as a hot bed of of culinary genius a newcomer could become so popular in just a few short years. Gustarium’s pizza is a wonderful combination of high-quality ingredients. selected with love. The amazing crust is leavened over 48 hours. The flavor of the crust is deep and complex without being overwhelming. The toppings are of the highest quality. The staff are friendly, engaging and kind. It’s a surprising thing that such great food can be found in such close proximity to major tourist landmarks, but here it is. Definitely run and get some food here!
