سلام دوستان . ممنونم که نظر طولانی منو میخونین . من همین امروز رفتم اینجا و یه v60 از قهوه تخصصی اتیوپی بنسا گرفتم ( با باریستا گپ و گفت کردم و ایشون این قهوه رو پیشنهاد کردن ) . وقتی قهوه آماده شد . بوی خوبی داشت خیلی واضح نبود چه عطری داره اما خوب بود یه آرومایی متشکل از بوی آلو و ( خیلی خیلی کم شاید مربای توت فرنگی ) یه مقدار هم مثلا بادوم ، خیلی مشخص نبود . وقتی ازش چشیدم ( متاسفانه یه مقدار رقیق دم شده بود ) خیلی طعم خاصی نمی‌داد. بیشتر طعم آلوی پخته و میوه های قرمز رو میداد یه مقدار هم طعم آجیلی . به صورت واضح نتونستم نت طعمی خاصی رو دریافت کنم ( فقط آلو پخته ) . در کل قهوه خوب بود . یه موردی هم که البته تخصیر رستری نیست اینه که لیوان ها همه کاغذیه و طعم قهوه رو یه مقدار خراب میکنه ( البته که باریستای دوست داشتی مجموعه سعی کرد با ریختن آب جوش توی لیوان و خالی کردنش قبل از سرو اون طعم کاغذ رو تا حد زیادی کاهش بده ) . این جا میتونین دون قهوه یا آسیاب شده ازشون بگیرید . در کل قهوه خوب بود ‌. رفتار باریستا خیلی خوب بود . فضا اون جا دوست داشتی بود . اما نسبت به تعریف ها و اون تصور من اونقدر خوب نبود . خوب بود اما خیلی خوب یا عالی نبود . از خوردن قهوه اینجا حتما لذت میبرین اما احتمال خیلی کمه داره که یه نت طعمی شفاف رو بتونین دریافت کنین . در کل ممنونم ازاین مجموعه . چون می‌دانم که اینجا یکی از بهترین برشته‌کاری‌های تهران است و افراد بسیار باسوادی متولّی آن هستند انقدر نمره‌ی پایینی می‌دهم. نمره‌ی پایینم متناسب با میزان ناامیدی و کلافگی‌ام است. مطمئنم برای خرید دان قهوه جای خوبی است امَا برای سِرو قهوه؟ برشته‌کاری مجهّز و اسم و رسم دار با کلّی دبدبه و کبکبه و افراد متخصّص و تجهیزات عالی و دانِ قهوه‌ی عالی چرا نمی‌تواند یک اسپرسوی قابل قبول (نه حتّیٰ عالی) ارائه بدهد آن هم به خاطر سهل‌انگاری. سه خط قهوه برای اسپرسو داشتند: اتیوپی گوجی، ترکیب صد در صد عربیکای مخصوص خودشان و همچنین ترکیب هفتاد-سی خودشان. اسپرسوی اتیوپی گوجی سفارش دادم. برای یک کافه‌ی بیرون‌بر قیمت چهل و شش تومان به نظر من زیاد است امّا مهم نیست. دستگاه اسپرسوسازشان از برند «فلکسی‌بار» بود که یک برند ایرانی قابل توجّه است. قهوه مزه‌ی زهر مار می‌داد. باریستا گیج می‌زد. چهل و دو گرم عصاره گرفت که فکر می‌کنم حاصل بیست یا بیست و دو گرم قهوه باشد (مطمئنم هجده گرم نبود چون قهوه‌ام رقیق نبود). وزن خروجی را هم با ترازو می‌پایید. قهوه همزمان بسیار تلخ، بسیار ترش و بسیار شور بود و بسیار غلیظ؛ این یعنی همزمان کم‌عصاره‌گیری و بیش‌عصاره‌گیری شده بود؛ به عبارت دیگر عصاره‌گیری نامتوازن یا همان چنلینگ. با توجّه به ظاهر امر و غلظت قهوه طبق برداشت من علّت چنلینگ نه اشتباه در آماده‌سازی که اشتباه در اندازه‌ی آسیاب بود. آسیاب قهوه آنقدر ریز بوده که فشار بسیار بالا رفته و آب برای عبور از قرصِ قهوه کانال زده. این بسیار تأسّف آور است چون نشان می‌دهد مسئله نه اشتباهِ لحظه‌ای باریستا، بلکه فقدان یک «دایال اینِ» ابتدایی و کنترل کیفی است. به عبارت ساده‌تر هیچکس برایش مهم نیست که آن قهوه‌ی اتیوپی گوجی باکیفیت و حاصل وسواس و دسترنج یک زنجیره‌ی بزرگ از انسان‌ها در کنار آن همه تجهیزات دم‌آوری چطور به خاطر این سهل‌انگاری و بی‌مسئولیتی تبدیل به زباله می‌شود و هدر می‌رود. این بسیار عصبانی کننده است. مگر طبخ یک اسپرسوی قابل قبول (نه حتّیٰ خوب یا عالی، بلکه فقط همین که خراب نشده باشد) چه قدر چیز غیر ممکنی است که حتّیٰ چنین جاهای با اسم و رسمی از ارائه‌ی آن عاجزند؟ مسئله «فقط» بر سر بی‌مسئولیتی است؛ نسبت به قهوه، نسبت به سرمایه و نسبت به مشتری.
