Ha
means
Red
River
which
is
the
largest
river
in
Northerm
Vietnam
and
reminds
me
of
the
Yellow
River
in
China.
Hong
Ha
Restaurant
is
a
small
family-owned
Vietnamese
restaurant
run
by
an
old
couple.
It
appeared
the
man
takes
care
of
serving
customers
and
the
lady
the
kitchen
though
who
came
out
often
to
greet
customers
as
well.
I
have
to
admit
there
is
personal
bias
in
giving
a
5
star
rating
for
the
restaurant.
The
rating
is
based
on
the
holistic
dinning
experience
and
would
have
been
lower
if
assessed
purely
on
the
food
and
ambiance.
The
owners
speak
some
Cantonese
which
is
my
mother
tongue.
It
was
an
amazing
experience
as
I
don't
speak
French.
The
restaurant
is
pretty
small
and
we
were
bumbling
elbows
literally
(not
because
of
COVID)
but
the
friendly
and
casual
ambience
made
it
easier.
We
ordered
Spring
rolls
as
starter
and
Pho
Bo
(Beef
noodle
soup)
as
main
course.
You
can
judge
to
a
large
extent
the
quality
of
a
Vietnamese
restaurant
from
the
Pho
it
serves.
For
Hong
Ha,
the
broth
of
the
Pho
tasted
good
but
it
would
have
been
better
if
it
is
more
complex
with
more
variety
of
herbs
added
in
preparing
the
broth.
I
was
told
by
the
owner
the
broth
is
prepared
freshly
everyday
with
ox
bone
and
beef
which
are
boiled
for
4
hours.
I
didn't
feel
any
MSG
(a
bad
habit
by
many
Asian
restaurants).
On
another
note,
the
customers
at
the
next
table
ordered
some
fried
noodle
which
I
found
that
crispy
noodle
was
used.
I
believe
authentic
fried
noodle
dishes
(no
matter
it
is
Vietnamese,
Chinese,
Japanese,
Thai,
Malay,
and
so
on)
do
not
deep
fried
the
noodle
to
make
it
crispy.
However,
this
seems
to
be
a
common
phonemenon
in
many
Asian
restaurants
that
proably
trying
to
cater
Western
palates.
I
can't
blame
them
for
the
adaptation
as
I
am
not
the
one
affected
by
the
bottom
line.
Of
course,
it
would
be
great
to
keep
the
traditional
cooking.
Lastly,
the
male
owner,
who
are
67,
told
me
that
they
planned
to
retire
and
are
selling
the
business.

wife
