You
just
have
to
love
flavor,
because
these
dishes
pack
a
ton
of
it.
Owner
René
Guzmán
is
breaking
all
kinds
of
stereotypes
with
Little
Ve’s,
his
vegan
Latin
restaurant
inside
The
Switch
Beer
&
Food
Hall
that’s
captured
the
attention
of
Omaha
vegans
and
carnivores
alike.
Whether
or
not
you
eat
meat,
you’ll
fall
for
the
bold,
awakening
flavors
that
take
your
attention
away
from
the
type
of
protein
and
transport
you
to
Mexico,
Cuba,
Puerto
Rico,
or
El
Salvador
(where
Guzmán’s
family
comes
from).
Little
Ve's
product
is
nearly
indistinguishable
from
meat,
and
it’s
often
more
delicious.
The
textures
of
these
proteins
is
eerily
similar
to
the
original,
with
a
similar
tenderness
and
chew.
But
the
spices
and
seasonings
Little
Ve’s
employ
are
so
deep
they
ensure
diners
won’t
miss
the
“meaty”
flavor.
The
Torta,
featuring
a
brilliant
mock
asada
and
fresh
veggies
inside
a
toasted
roll,
is
among
the
best
sandwiches
in
Omaha.
The
only
thing
larger
than
the
size
of
the
Burrito
is
the
amount
of
flavor
packed
into
it,
and
the
Birria
Tacos,
complete
with
a
slices
of
jackfruit
that
perfectly
mimic
pork,
carry
the
smoky,
earthy,
and
slightly
spicy
flavors
birria
brings
to
the
table.
Whether
you're
a
vegan
or
a
card-carrying
carnivore,
you're
going
to
love
this
place.
Little
Ve's
is
one
of
the
next
big
things
in
the
Omaha
food
scene.
