I took a 3 day Sundarbans trip with Bengal Tours on MV Dinghy. The cabins were small but the top deck was a nice place to hang out. Pros: booking was easy, the food on the boat was really good, staff were accommodating if you needed anything, we were taken to places that were a bit quieter than elsewhere including a great sunrise boat trip and walk. Cons: there was a last minute change that required us to be on the boat much earlier than planned which was managed poorly, the tour guide could have done more to stop other tourists littering and feeding the animals, very little information about the ecosystem was made available and I didn't learn much although answers were given when we asked. I'd definitely recommend Bengal Tours for foreign tourists and I enjoyed the trip, but if you plan to do the Sundarbans there will be a lot of other tourists with different companies, and a lot of rubbish at the sites.
